Sweet potato fries arrived excellently crispy, no limp sadness. But the pita presentation impressed me most; fresh, warm, and plated with care. Service was warm, attentive, and professional without being stiff. I confess I expected a fancy place to prioritize looks over taste. Not here. This burger delivers on both. The prices lean upscale, but the quality justifies the bill. I will return for that Royale alone.

Bixenberg Tavern, I confess, has ruined other smash burgers for me. The patty edges were lacy, crisp, and deeply caramelized. The cheese melted into every crevice. The bun held firm, soft but sturdy. Cheese curds arrived as the best I have had in Waukesha, squeaky and golden. Salt-vinegar chips came fresh, perfectly seasoned, with a vinegar tang that made my lips pucker. Service was fast and friendly, even during a packed evening. This is a no-frills tavern doing burgers with serious skill. I left with grease on my fingers and satisfaction in my soul.
